Hi everyone! Today I have another delicious recipe again. Seriously, I could eat these Quesadillas every day. They have a lot of good and healthy nutritians and are vegetarian as well. Awesome right? Quinoa for example is a perfect healthy alternative to rice and the tahini sauce adds the nice flavor.  But I don´t want to mumble about it for too long, so if you´re ready, I´ll get right into it!

For the quesadillas you need:

- 1 cup dry quinoa

- 2 cups of water
- a few leaves of fresh or 1/3 cup of frozen spinach 
- 1/2 Avocado
- 1/4 grated cheese
- 1/4 feta cheese
- large plain, multi-grain or spinach tortilla


For the tahini sauce you need:


- 1/2 Avocado

- 1/4 well stirred tahini
- the juice of 1/2 lemon
- 1/2 tsp. ground cumin
- 1 tbsp. ground cilantro
- 1/2 tsp. salt
- 1/4 cup water

1. First, start off by cooking the quinoa. Cook 1 cup of quinoa with 
2 cups of water on medium heat for 12 min and then let it rest for 5 more minutes.

2. Next you can make the tahini sauce. Mix all ingrediants for the sauce in a bowl with a blender until it´s nice and smooth. I always like to add a bit more lemon juice but it depends on your taste. 





3. When the tahini sauce is ready you can add it and the black beans to the quinoa and mix well until the mixture becomes a bit sticky.


4. Now it´s time to melt the cheese. Place your tortilla in a pan and cook until the cheese is melted. Place it one a plate afterwards and layer all the other ingrediants, so the spinach the quinoa tahini mix and the other half of the avocado on top of the cheese. 



Fold it over and you are ready to enjoy!! I just adore the look of it as well.
